Cauliflower Crust Pizza – Gluten-Free

Cauliflower Crust
  • 1 cauliflower or 500g cauliflower rice
  • 1 egg
  • 300g parmesan cheese (optional
  • 1 tsp salt
Pizza Toppings
  • 1/2 c. roasted tomato sauce
  • 4 strips bacon
  • 250g burrata
  • 1/2 onion, sliced thinly
  • Shredded parmesan

Cauliflower pizza crust is all the new rage for veggie loving pizza eaters as well as all those staying away from gluten. Even if you aren't either, try this recipe and be pleasantly surprised. On the Otto Grill, it's easy and fast and, oh, so tasty! Cauliflower crust is an easy way to replace regular pizza crust and also add in veggies to a favorite meal.


Californians like their veggies and gluten free pizza which is why this Cauliflower Crust Pizza is all the rage. Out in California, the sun shines and the beach is plentiful which means the vegetables are plenty too. This recipe is a delicious way to incorporate veggies into a pizza dinner undetected. And the crust is tasty from the Otto Grill! It doesn’t taste like bread but it doesn’t taste like vegetables either.


Make the Cauliflower Pizza Crust

Use a food processor to cut up the cauliflower into tiny pieces no bigger than rice. Pour the cauliflower bits into a bowl and add the egg. Mix well and add salt and the cheese, if you want it. The cheese gives the crust an extra flavor and holds the crust together better.

Preheat the Otto Grill

Preheat the grill at the highest temperature for 3 minutes. While you preheat your Otto Grill, place the crust on Otto’s pizza stone. Grease it up with a bit of coconut or other oil. Then, use your hands to press the cauliflower mixture onto the pizza stone. Press it out evenly but thinly – about 1 cm thick.

Grill the Cauliflower Crust

Lower the temp to the middle (between big and little flame). Then, add the cauliflower pizza crust and grill for 5-10 minutes. Watch it and when the edges start to become dry, it’s ready to be taken out.

Caramelize Onions

While the crust precooks and bacon grills, make the caramelized onions. Take the thinly sliced onion halves and add a tablespoon on coconut oil. Cook at a medium heat until translucent and then, turn down the heat to low and simmer until caramelized.

Grill Bacon

When the grill has preheated, grill up the bacon. Place the strips on the grill grate and use the highest temperature at the highest level. The bacon only needs 1 minute each side, so watch it carefully. Set this aside for finishing the cauliflower pizza.

Add Toppings

Add all the fixings. We used a homemade roasted tomato sauce but you can use a regular tomato sauce from any supermarket. Add slices of burrata evenly. Do not add the caramelized onions or arugula until the end with the bacon.

Grill Cauliflower Pizza

Now, grill the pizza on the Otto Grill again at the same heat as the precook. Use a medium height until the cheese is fully melted.


Add More Toppings

Now, add the caramelized onions, fresh arugula and bacon cut up into bits. Serve and enjoy!
